Cozy October recipes worth making

Hey Reader,

Can you believe we're already heading into second week of October? I’m so ready for all things squash, apples, and pumpkin, plus cozy dinners that make the house smell amazing.

If you’re eating seasonally this month (or just want a little fall flavor in your week), here are 7 easy recipes to make!

1. 25-Minute Thai Pumpkin Curry with Chickpeas

For the nights when you want something hearty, cozy, and fast. Made with canned pumpkin because who’s cutting up a whole pumpkin on a Tuesday? Serve over rice or quinoa!

2. Easy Pasta with Pumpkin Sage Sauce

Creamy, savory, and full of fall flavor. Comforting enough for a chilly evening, simple enough for weeknights (and ready in less than 30).

3. Apple Crisp with Oat Topping

Classic, cozy, and the perfect way to use up orchard apples. Highly recommend a scoop of vanilla ice cream on top.

4. Meal Prep Chicken Salad with Grapes

My go-to high-protein lunch! It’s made with Greek yogurt and just a touch of mayo for balance. Hot take: better without celery 😉 (but I won’t judge if you add some).

5. Skillet Enchiladas with Beans + Sweet Potatoes

Cheesy, beany, saucy goodness — all in one pan, no tortilla rolling required.

6. Apple Pie Yogurt Bowls

Spiced sautéed apples + crunchy granola + Greek yogurt = breakfast that tastes like dessert.

7. Berbere Chicken with Dill Roasted Potatoes

A flavorful, cozy dinner that adapts to what’s in season. Try adding massaged kale or butternut mash for even more seasonal veg!
