If the “what’s for dinner?” question has been haunting you lately, same. Between work, errands, and trying to remember if I already bought sweet potatoes (spoiler: I did, twice), dinner can feel like a lot sometimes.

So this week, I’m keeping things simple with 3 easy seasonal dinners that check all the boxes: cozy, wholesome, and quick enough for a random Tuesday night when your energy levels are somewhere between “toast for dinner” and “let’s just order pizza.”

Here’s what’s on the menu:

1. Ground Chicken Taco Sweet Potato Bowls

Protein-packed and ready in about 30 minutes, this recipe is a weeknight savior. Roasted sweet potatoes are the ultimate comfort, but swap in (or add) roasted squash, potatoes, or other seasonal veg if you'd like.

2. Quick Pumpkin Curry

This Thai-style pumpkin curry is one of the best dinners to make with pantry staples! Serve with fluffy rice for a complete meal that's faster to make than getting Thai takeout.

3. Spicy Red Lentil + Tomato Soup

One of my favorite ways to enjoy tomatoes in the off season is with canned ones—packed at peak freshness and always in the pantry. This red lentil tomato soup is thick, velvety, and protein-rich, and grilled cheese croutons on top are elite.
