This dinner recipe is gaining popularity on Roots and Radishes right now, and for good reason!

Sweet potato bowls with ground chicken taco meat: they sounds so basic, but they're truly awesome. And especially perfect for weeknight meals!

The bowl base is a combo of roasted sweet potato cubes, greens, and optional grains if you'd like/have time. And the protein is a tender ground chicken taco meat simmered with salsa and black beans. No dry and crumbly taco meat here!

For toppings (very important), I love avocado, feta, cilantro, pepitas, pickled red onions, and tortilla chips. Now you've got a simple yet nourishing dinner the whole family will love!
