Hi Reader, If you've been around here for a while, you know that having too many tomatoes is a problem that I want to have. I love a challenge about using up veggies! So whether you're a gardener with tomato plants, or have acquired a bunch of tomatoes in some other way... these recipe ideas are the ones I still come back to every year. 1. Roasted Cherry Tomato SoupReally, you can use any tomatoes here! The roasted tomato flavor is so incredible, and the soup tastes incredibly fresh. In summer, I love topping it with sweet corn, feta, croutons, herbs, and a generous drizzle of olive oil. This one is also freezer-friendly for longer-term storage!
2. Tomato Peach GazpachoI often think I would take fresh gazpacho over a salad... and I love salad, so that's saying a lot. This version uses a couple fresh summer peaches for a hint of sweetness. I love meal prepping a big batch and storing in 16-ounce jars for easy lunches.
3. Garlic Roasted TomatoesRoasting up a full sheet pan of cherry tomatoes with some garlic and olive oil is the perfect flavor bomb to keep in your fridge. Add to pasta, salads, sandwiches, morning eggs... so good!
4. Zippy Chickpea Salad with Tomatoes & FetaA dense bean salad to keep in your fridge for flavorful lunches or sides! We love scooping this one up with pita chips.
5. Tuna & Olive Tapenade Pasta SaladPerfect if you have fresh cherry tomatoes to use up! I love having this one on hand for a high protein lunch.
