🥕 Here's what to make with March produce


Hi Reader,

With a few warmer days sprinkled in here and there, I am so ready for spring!

March seasonal produce is *almost* to spring, but not quite yet. So we're going to see a lot of the same late winter produce: root veggies, cabbage, hardy greens, and citrus. If you have over-wintered carrots available, I highly recommend! The cooler weather makes them the sweetest carrots you'll ever eat.

Towards the end of March, you might get some tender greens and herbs depending on where you live (aka how quickly your ground thaws).

1. Carrot Cake Baked Oatmeal

This is your sign to use carrots in wholesome breakfast food that tastes like dessert and works as meal prep. Raisins are contentious at our house... feel free omit if you need to (but I like them 😊).


2. Honey Roasted Parsnips

I didn't try parsnips until adulthood, but I absolutely love them. They get so sweet when roasted, making a simple and cozy side for winter. Another root veggie that's still in season for March!


3. Kale Frittata with Potato & Cheddar

Classic and comforting, this frittata is perfect for a Saturday or Sunday with leftovers for the week. We love using leftover slices in breakfast sandwiches!


4. Italian Brussels Sprouts Chop

This might be one of my favorite salads of all time. The Brussels sprouts have an amazing shreddy texture that soaks up the simple peperoncini vinaigrette. Plus, it's packed with tons of add-ins that give pasta salad vibes: feta, olives, peperoncini, marinated artichokes. So good!


5. Lemony Lentil Soup with Potatoes & Dill

NEW on the blog! With fresh dill and lemon for brightness, this soup is warm and satisfying without being heavy. It's perfect for the transition to spring when you're craving something fresh but also somehow craving soup at the same time.
