✨ My newest winter grain salad fixation


Hey Reader!

I don't mess around when it comes to salads, and grain salads are one of my favorites for eating plenty of hearty, nourishing food in any season.

Lately? This kale farro salad has become my weekly fixation.

It's packed with winter veg like kale and radicchio, plus bold, briny pantry staples (castelvetrano olives, peperoncini, canned/marinated artichokes, feta...).

There's texture, nutty chew from farro, and tons of color.

And it's one of those salads that actually gets better as it sits. Even on day three in the fridge, it's still fresh, zesty, and more flavorful from sitting in peperoncini brine vinaigrette. (but not soggy!)

For me, this is the ideal working lunch salad: as packable as it is dish-uppable while working from home.

It's pretty hearty on its own, but also great topped with smoked salmon, tinned fish (like tuna or mackerel), or leftover chicken.
