✨ My newest winter grain salad fixation

Hey Reader!

I don't mess around when it comes to salads, and grain salads are one of my favorites for eating plenty of hearty, nourishing food in any season.

Lately? This kale farro salad has become my weekly fixation.

It's packed with winter veg like kale and radicchio, plus bold, briny pantry staples (castelvetrano olives, peperoncini, canned/marinated artichokes, feta...).

There's texture, nutty chew from farro, and tons of color.

And it's one of those salads that actually gets better as it sits. Even on day three in the fridge, it's still fresh, zesty, and more flavorful from sitting in peperoncini brine vinaigrette. (but not soggy!)

For me, this is the ideal working lunch salad: as packable as it is dish-uppable while working from home.

It's pretty hearty on its own, but also great topped with smoked salmon, tinned fish (like tuna or mackerel), or leftover chicken.

Let me know if you try this one!

Talk soon,

💛 Tera

Hey Reader, To me, strawberry season means we are finally on our way to a steady summer: consistently warm days and allll the fresh berries and stone fruits are on their way. In Wisconsin, the local strawberry season is short—too short to only enjoy local strawberries. I'll eat them while they're available, but that's one thing about having a realistic approach to eating seasonally—you don't have to eat strictly seasonally, only locally, all the time. If you do, amazing. But I think I live...

Hey Reader, How are you at planning ahead and/or prepping for meals? Do you like doing it? I wouldn't say I'm a consistent meal planner or meal prep person, but when possible, I do like to have 1-2 of the following prepped for the week: proteins, grains, and/or beans (cooked from dried). They simplify weekly meals so much, plus they can be adapted with any seasonal veggies available. And this Instant Pot peperoncini chicken has been on repeat at my house for that exact purpose. It's truly a...
