Hey Reader, I've been holding out on you with this recipe, and last week I finally made the time to photograph and publish it! I don't know what took me so long, but I'm so excited to share it with you because it's got easy summer weeknight meal written all over it. It came together sort of as a happy accident last summer. I was developing my herby chicken meatballs recipe and my creamy cucumber salad, so I had both leftovers in the fridge. One day I decided to combine them with greens, feta, pickled red onions, and serve with pita wedges and top it off with chili crisp. Those flavors just hit all the right notes, and chicken meatball bowls were born. Andy's son now says it's his favorite meal that I make?! I mean, I'll take that whenever I can get it. All three of us getting excited about a recipe means it gets added to the weekly rotation. That, plus it's done in 30 minutes. Once the meatballs are in the oven, you get everything else ready to assemble, the creamy cucumber salad being the only other thing you'll make. After the meatballs are done, pile into bowls!
