9 Farmers Market Recipes to Make in June

I love this time of year when the farmers market is filled with ALL the fresh summer produce! If you're going to a farmers market this weekend, or simply looking for ways to use up some veggies, here are some easy recipes you can make with produce that's in season right now:

Cucumbers

  1. Quinoa Salad with Cucumbers
    —> A simple and hearty meal prep salad that can be paired with any protein! Makes weekday lunches easier.
  2. Vinegar Cucumber Salad
    —> The classic family recipe I grew up with that we make all summer long. It's the easiest side dish for grilling out!
  3. Smoky Turkey Burgers with Tzatziki Sauce
    —> Use up cukes in a creamy tzatziki sauce with smoked paprika-spiked turkey burgers.

Strawberries

  1. Quick-pickled Strawberries
    —> A fun and quick way to use strawberries for a snack or appetizer.
  2. Summer Strawberry Salad with Salmon
    —> My take on a hometown restaurant fave. Pan-seared salmon, salted maple almonds, ready in about 20 minutes.
  3. Strawberry Crisp
    —> The jammiest strawberries topped with a buttery oat almond topping.

Fresh Herbs + Greens

Fresh herbs can be hard to use up, but not with these recipes!

  1. Parsley Walnut Pesto
    —> So fresh and bright! A great way to use up parsley en masse. Can be adapted with other herbs like basil or cilantro!
  2. Basil Vinaigrette
    —> A new way to use up fresh basil that's not pesto! Prep it in advance for the week for fresh dressing all week long.
  3. Everyday Leafy Greens Salad
    —>The easiest no-fuss, fresh side salad with homemade lemon vinaigrette. The perfect add to your cookout or sandwich for lunch.

BTW, last week, my CSA legit had a monster head of lettuce that was 20 inches in diameter, so we've been devouring that everyday leafy green salad and topping sandwiches. Definitely my happy place.
