7 Recipes to Make with August Produce


Hey Reader,

My garden has officially exploded and we're at the point where I'm going to need to be out there harvesting daily or I'm definitely going to lose some tomatoes.

Which actually might not be the worst thing, because who doesn't love a few volunteer sungold tomato plants the following year??

All that is to say, August produce is a delight, so here's a bunch of produce that's in season and what you can make with it! Whether it's from your farmers market, CSA, garden, or grocery store.

1. Blueberry Peach Salad

A recipe I learned from my mom years ago, and it's still a must-make every summer. The best time to make it is when peaches and blueberries are at peak! (Try it with frozen at your own peril lol it's just not the same.)

2. Tomato Sandwich

This is so basic, and with a good, fat, juicy slice of summer tomato... it's absolutely awesome. I make it with whipped feta unless I'm feeling lazy, and then it's classic mayo. Hard to go wrong!

3. Quick Fridge Pickles with Dill

Speaking of sandwiches, fresh fridge pickles are hard to beat as a sandwich topping. I got some Kirby cucumbers in my CSA last week, so I made a quick little jar fresh dill pickles that we've been munching on.

4. Peach Crisp

We must make this every. single. summer! The peaches are so jammy, and we literally end up eating the crisp right out of the pan. Vanilla ice cream on top is elite.

5. Olive Tapenade & Tuna Pasta Salad with Cherry Tomatoes

If you hate olives, you might wanna pass this one up! But if you love them like I do, using store-bought olive tapenade as a pasta salad dressing is lowkey one of my fave kitchen shortcuts. High protein & great for work week lunches.

6. Blueberry Lemon Overnight Oats

One of my favorite meal preps of all time, these creamy, pillowy overnight oats are awesome for cooling you down on hot summer mornings. Let your fridge do all the work for you while you sleep!

7. Feel Good Zucchini Bread

One of my favorite sweet treats using nourishing ingredients! Oats for flour, and dates & coconut sugar to sweeten. Everything gets blended up in a food processor and bakes into a tender, fluffy zucchini bread.

I've been testing SO many recipes and am excited to share in coming weeks. Here's a sneak preview:

  • Lemon blueberry scones made with spelt flour and topped with a homemade lemon sugar. To be eaten warm from the oven with butter. Stay tuned!
  • Yogurt dill dressing with feta - Inspired by blue cheese dressing... but better (in my opinion). Been serving it on garden salads and with roasted potatoes at dinner.
  • Kitchen sink granola bars - Not sure if that's what I'll actually call these?? But that's the concept! A granola bar that helps you use up what's in your pantry. Like that last bit of tahini or the three half-used bags of sliced almonds you bought because you kept forgetting you already had them... not speaking from experience or anything.
