Hey Reader, My Fourth of July traditions usually consist of family, lake days, and lots of grilling and snacking. But for me, this also includes a lot of driving - usually 4+ hours away. So for any recipes I'm making, it's gotta be simple and easy to pack! If you're in the same boat, or you just like simplicity no matter what (me, too!), these recipe ideas are ones we keep coming back to at our house. 1. Fresh Peach Salsa with Sweet Corn + AvocadoBest eaten within 24 hours... and that won't be a problem at all! Sweet and spicy with some peach and jalapeño action, this is the salsa you put out on your patio with tortilla chips and cold drinks.
2. Zippy Summer Chickpea Salad with FetaA simple combine-and-serve recipe that holds up well in the fridge. Great if you're traveling and want to make it ahead! Serve with pita chips or for simple lunch bowls and salads.
3. Honey Lime Fruit SaladFruit salads should have dressings, too! Honey and lime with summer berries, watermelon, and mint is SO refreshing.
4. Creamy Cucumber SaladHot July days call for cooling ingredients you can easily combine in a bowl—no oven required.
5. Vinegar Cucumber SaladSee above! But make it vinegary.
6. Feel-Good Zucchini BreadIf you do feel like turning on an oven, this one is great to make ahead for holiday weekend breakfasts! So easy to slice and serve with butter for simple mornings.
7. Zesty Street Corn Salad (Stovetop)If you love street corn, this is the version I make when I don't want to use my oven on a hot day. I just sauté fresh corn on the stovetop in some chipotle seasoning, then combine it with other flavorful ingredients for a creamy, scoop-able salad.
